Butternut Squash Cajun Fries

Thank you to Steve for another great recipe.  He says he enjoys making this (and eating it too!) at least once every couple weeks, and thinks it makes a great weekend fun side-dish idea.  I do too!

Prep Time: 20 minutes
Cooking Time: 15 minutes


  • cooking spray
  • 1 pound butternut squash – peeled, seeded, and cut into thick French fries
  • 1 pinch salt to taste
  • 1/4 teaspoon ground black pepper, or to taste
  • 1/2 teaspoon Cajun seasoning, or to taste


  1. Preheat your oven to 450 degrees F (230 degrees C).
  2. Spray the baking sheet with your cooking spray.
  3. Blot any moisture from the butternut squash fries with a paper towels, and place them on the prepared baking sheet.
  4. Sprinkle with salt, black pepper, and Cajun seasoning.
  5. Bake in the preheated oven until lightly browned and tender (approximately 15 to 20 minutes), turning once.
