Lemon Parfait

Lemon Parfait

Yield: 6 Servings

Calories per serving: 127

Fat per serving: 2 grams

Ingredients

  • 3/4 cup fat-free milk
  • a dash of salt
  • 1/3 cup quick-cooking couscous
  • 1/2 cup lemon low-fat yogurt
  • 1/2 cup light dairy sour cream
  • 1 tablespoon honey
  • 1/4 teaspoon finely shredded lemon peel
  • 3 cups assorted fruit (for example, sliced strawberries, nectarines, or star fruit; sliced peeled kiwifruit; blueberries; and/or raspberries)

Instructions

  1. In a medium saucepan combine milk and salt, bringing to a boil.
  2. Stir in couscous; reduce heat and simmer, covered for 1 minute.
  3. Remove from heat and let it stand for 5 minutes. Fluff with a fork. Cool.
  4. In a small bowl combine yogurt, sour cream, honey, and lemon peel; stir into couscous mixture.
  5. To serve, spoon half of the fruit into 6 parfait glasses. Spoon couscous mixture over fruit; top with the remaining fruit. Makes 6 servings.
