Diabetic Pumpkin Pie

Here is a delicious diabetic pumpkin pie recipe one of our readers emailed me the other day.   Thanks Steve from Florida.  This looks like one of our simpler recipes but who says they have to be difficult and take hours to prepare?  I’d recommend a nice spoon full of cool whip on top (unless you’re behaving yourself, in which I would recommend a sugar-free cool whip).

1 c. 2% milk
1/2 c. apple juice
3 tbsp. liquid sweetener (or 7 packets powdered)
1 tsp. each cinnamon & nutmeg
2 c. canned pumpkin
2 well beaten eggs
1/2 tsp. cloves

Combine all ingredients together and pour into unbaked pie crust. Bake about 40 minutes in 375 degree oven.
